baked avocado









Ingredients

2 ripe avocados

A hand full of cherry tomatoes, sliced in half

4 sun-dried tomatoes finely chopped

1 clove of crushed garlic

A few


chopped olives

Juice and zest of half a lemon

Olive oil

Salt and pepper to taste

Fresh basil and chopped spring onions for garnish

Method

Pre heat the oven 200c


Half the avocado, remove the stone and score in a criss cross pattern

Mix all other ingredients apart from garnish in a bowl, season with salt and pepper

Fill the centre of the avocados with the mixture

Bake the avocados


for 15 mins



Serve warm with garnish of spring onions and basil over the top
